Your Favorite Cupcake

FOOD POISONING.

It was food poisoning. Boo. My brother had that on Christmas Eve morning too. But now my hubby is feeling much better. Thank you for your prayers and well-wishes. :)

OKAY! (I'm loving the caps today) So the wedding cake is still up in the air...but there is a distinct possibility that I COULD be making a cupcake wedding cake with my sister-in-law.

So I have a question for you. Obviously the bride and groom (and the bride's mother) get the final say, but I want to know...

What's your favorite cupcake and/or cupcake filling?

    As for the cupcakes, we just got married last month and we did a small cake and then mostly cupcakes! It is so much easier for everybody involved and the guests loved the variety! We just did chocolate, vanilla, red velvet and carrot cake. Good luck!

    And I always enjoy a good rainbow cupcake, with multi-colored sprinkles or mini m&ms inside. But I've never actually made them before.

    I have to just pick one? I don't think it's possible. Chocolate is always my favorite but perhaps if you create a layer look you can go with different flavors and fillings on each level?

  6. A good ole vanilla cupcake always satisfies, especially one made with vanilla beans. Almond is a close second (and would be great for the wedding, too!). For frosting, I like Swiss meringue buttercream (any flavor). Red velvet is always a hit as well.

    I think a chocolate cupcake with chocolate filling might be overkill, but a nice bavarian or vanilla cream would hit the spot. Hey, don't be stingy. Send all of us a cupcake!

    To frost my cupcakes, I use those clear disposable piping bags and a Wilton 1M tip. You're right about the bag not being enough; I can only frost about 6-8 cupcakes with each refill. I do have some bigger Wilton bags (14 & 16 inch I think), which would solve that problem...except I already cut the opening on those bags too big for the 1M tip to fit and I don't want to buy new bags. So I just refill as I go (messy, but I only deal with 24-36 cupcakes at a time). For a bunch of wedding cupcakes the bigger bag would be the way to go so you wouldn't need to stop and fill as often.
